A special cake for a special man...

We VALUE our parents in the country....

So in my family it's no surprise I most certainly adore my daddy, like most girls do. However, this year is just a little extra special love.. my papa turned 80 years old recently and with that came a huge celebration in his honor and of course cake!




I hear a lot these days about people mistreating their parents as if they owe you anything.. if anything YOU owe THEM! It's shame in this new generation how spoiled kids can be that they will treat their parents with disrespect.. in my family you would have gotten a whoppin'.. and trust me I got my fair share! OK, rant over..:) On to the good stuff...

So, my mom asked me a few months ago if I would make my Daddy's 80th birthday cake and of course being the cake lover that I am (plus my mom is very persuasive) I agreed.. We old fashion folks so I didn't need to even ask what flavor... chocolate/vanilla, a standard in this family..




I created a half sheet cake of half chocolate & half  vanilla.. Plus 16 Oreo Cream cupcakes... My family size is large to say the very least.. I'm 1 of 10 and with over 20 grandchildren... yeah we need a lot of cake! What was special about this cake is the Edible Image I created with 3 picture of my dad throughout his life... childhood, early adult, and later years... I think he loved it, I know it was a big hit at the party..





With a Vanilla Butter cream frosting and a Fondant Sign that read "60 more years to go" because he promised me a while back he'd live to be a 140.. and I haven't let him forget it either! He even wrote a song about it and sang it at the party... *tear* :)



Here's the recipe for my special THICK Butter cream! Enough to cover a 9x13 or (2) 8' round cakes




Ingredients:
  • 1 cup Crisco vegetable shortening
  • 3 cups of powder sugar
  • 2 tsp Vanilla extract or Vanilla bean paste ( I use both)
  • 2-3 tsp milk (optional)
Directions:
  1. Beat Crisco and Vanilla extract/paste in a medium/large mixing bowl until creamy
  2. Slowly add powder sugar 1/2 cup at a time until all is incorporated
  3. Beat until fluffy (typically 5 minutes)
  4. If it's too thick for you add 1 tsp milk at time until right consistency.
